Finger millet (Eleusine coracana (L.) Gaertn.) is one of the important staple food crops, drawing considerable attention owing to its nutritional richness and resilience to challenging growing conditions. The substantial grain nutrients, especially the high calcium content in its grain’s positions finger millet as a promising solution for addressing malnutrition particularly calcium deficiencies such as osteoporosis and, contributes to overcoming food security challenges. Nevertheless, the grain nutrient profile of finger millet, like that of other crops, is significantly shaped by factors such as genotype, environment, and their interaction. This chapter underscores the significance of finger millet as a nutritious food source and its potential in combating nutrient deficiencies. It emphasizes the impact of genetic diversity on shaping the grain nutrient traits of finger millet, stressing the importance of efficient characterization and utilization of germplasm to harness desired nutritional traits. The chapter delves into existing studies on grain nutrient composition, exploring the intricate interplay of genetic and environmental factors influencing grain nutrient content, and provides valuable insights for researchers and breeders, guiding them in the development of biofortified finger millet cultivars.
