Novel Approaches in Microbial Proteases for Biotransformation: Production, Commercial Aspect, and Applications

In a global context of sustainability and food security, various scientific researchers are being carried out all over the world. The use of enzymes in bioprocessing is both to meet the need to increase production and to solve various technological problems. Microorganisms and their enzymes represent many intersecting characteristics such as elevating growth speed, capacity of cultivation at high amounts, safety, and sustainability. In particular, proteases are important enzymes in the industrial field that can have different origins. Bioprocessing using microbial proteases opens up promising prospects for remedying these various problems. Proteases can be used in waste recycling/environmental protection and many other applications such as bioremediation, industrial bioconversions, livestock feed, pharmaceutical, and biotechnological significance. This chapter attempts to explain and deals with various features allied to the use of microbial proteases in biotransformation, as well as the future prospects and recommendations in this field of research.
