Millets are important cereal crops that have gained attention due to their nutritional quality and environmental adaptability. The growing interest towards millets and millet-based products points out the requirement for advanced packaging technologies to enhance the quality and shelf life. Millets are susceptible to moisture absorption, enzyme activities, which cause lipid oxidation, rapid rancidity, and microbial contamination, posing challenges to ensuring safety. Smart packaging technologies, such as active, intelligent, and digitally enabled packaging, offer a solution to these challenges. Compared to conventional packaging, the active ingredients in the package extend the shelf life of the food product by mitigating oxidation, microbial growth, and moisture loss during storage. The utilization of various indicators and sensors as an intelligent packaging technique monitors the real time quality of products. The integration of artificial intelligence (AI), machine learning (ML), and the Internet of Things (IoT) further enhances monitoring, traceability, and predictive shelf-life management through the use of smart sensors, radio frequency identification (RFID) and near-field communication tags, and blockchain systems. These advancements not only enhance the safety and transparency of millet supply chains but also align with sustainability goals by reducing food waste and minimising resource use. This chapter discusses the various smart packaging techniques and regulatory aspects related to millets and millet-based products.
