Health-Promoting, Gluten-Free Breakfast Cereals from Common Buckwheat: A Nutrient-Dense Innovation and Consumer Acceptability Study
摘要
The growing hunger demands, water stress among various countries, challenging environmental disasters, and reliance only on few crops for consumption and use in food industries are leading to food insecurity. This study evaluates the acceptability of products made from Buckwheat as a Breakfast cereal, such as rolled flakes and honey- coated muesli with nuts. Changing climatic conditions impose the need for more diverse crop utilization for sustainability. Buckwheat is one of the sustainable options to tackle global hunger and food insecurity.
