Development of Roselle (Hibiscus sabdariffa) Calyces Jelly: A Functional, Nutrient-Rich Food Innovation

Hibiscus sabdariffa, commonly known as roselle, is a versatile edible crop employed worldwide in food preparation and herbal remedies, where its calyces provide exceptional antioxidant capacity among leaves, fruits, roots, and seeds. This investigation formulated four types of roselle calyx jelly: dried variants 1 (76.19% calyces, 4.76% agar, 19.05% sugar) and 2 (70.80% calyces, 2.65% agar, 26.55% sugar), mirrored by fresh equivalents. Panelists rated Sample 2 highest in both dried and fresh forms for taste and consistency. These functional jellies, boast superior vitamin C, phenolic antioxidants, protein, and fiber with minimal calories and absent fat, ideal for health-focused consumers.
