Metabolic Syndrome, Cardiovascular and Thrombotic Diseases, and Food Functions: Functionality of Garlic-Derived Sulfur Compounds against Metabolic Syndrome

Garlic (Allium sativum L.) contains bioactive sulfur compounds with various health benefits, including anti-atherosclerotic, anti-diabetic, anti-obesity, and cardiovascular-protective effects. Diallyl trisulfide (DATS), a prominent sulfur compound derived from allicin, exhibits potent biological activities such as inhibition of lipid accumulation, reduction of blood pressure, anti-platelet, and anti-coagulation. These actions are associated with the regulation of lipid metabolism, hydrogen sulfide (H₂S) generation, and modulation of signaling pathways, including PPARγ/LXRα and JNK. This chapter highlights the role of garlic and DATS in preventing lifestyle-related diseases and metabolic syndrome through multifaceted physiological mechanisms, providing evidence for their functional food potential.
