Green tea and black soybean are Japanese traditional foods and functional foods. These food materials contain abundant polyphenols, which play an important role in maintaining health. However, it is known that polyphenols are recognized as xenobiotics in the human body and their concentrations in the body are extremely low except in the digestive tract. Here, we mainly show the functions of polyphenols contained in green tea and black soybean at concentrations likely to be present in the body after ingestion.

Green tea and black soybean are Japanese traditional foods and functional foods. These food materials contain abundant polyphenols, which play an important role in maintaining health.
