Application of Lean Manufacturing to Increase Productivity in a Craft Beer

The present research focuses on the craft beer sector, where one of the most critical issues identified is low productivity in the production process. Therefore, alternatives are proposed to increase productivity, with the main objective being the application of Lean Manufacturing tools such as System Layout Planning (SLP), which reduces movement and circulation times; Value Stream Mapping (VSM), which al-lows the calculation of Takt time and bottlenecks in the production process; 5S and Standardized Work for proper organization within the plant; and finally, Just in Time (JIT) to reduce waste. Simulation with Arena and Chemcad showed that productivity increased from 58% to 63.8%. Therefore, Lean Manufacturing not only improves productivity but also reduces circulation, transport, and waiting times. Each tool applied and simulated with the mentioned software demonstrates significant improvements in the production process, showing that these techniques not only increase productivity but also optimize the use of resources and time, contributing to the development and competitiveness of the craft beer industry.
