The application of antimicrobials in food packaging is a novel, multidisciplinary technique that mainly aims to enhance sustainability and ensure food safety. Antimicrobial (AM) food packaging is a significant alternative to safeguard food goods throughout their manufacturing process, including preparation, storage, and distribution. Its purpose is to increase the longevity of edible items by minimizing bacterial activity. Antimicrobial agents, such as natural extracts, nanoparticles, and synthetic compounds, are integrated into the packaging film using advanced techniques. This method enables the deliberate and regulated release of antimicrobial substances, thereby inhibiting the proliferation of detrimental microorganisms and prolonging the product’s durability. The polymer coating inhibits the development of contaminating microbial activity by including antimicrobial compounds. This chapter examines the progress, uses, and challenges related to the use of antimicrobial compounds in the packaging of food products. Additionally, a comprehensive analysis of antimicrobial agents, delving into their mechanisms of action, integration into packaging systems, and their capacity to hinder the growth of harmful microorganisms is also targeted. This chapter also emphasizes current advancements in intelligent packaging technologies, such as the use of nanoparticles, which provide enhanced antibacterial effectiveness and sustainability. This chapter concludes by examining the future possibilities of antimicrobial packaging, highlighting the need for ongoing research and development to address current obstacles and improve food safety.
