Chia seeds (Salvia hispanica L.), native to Central America and historically revered by ancient civilizations such as the Aztecs and Mayans, have reemerged in the modern era as a globally celebrated superfood. Popular for their exceptional nutritional profile—including higher dietary fiber, omega-3 fatty acids (ALA), protein, antioxidants, and essential minerals. Seeds offer multiple health benefits, mostly for cardiovascular health, metabolic function, and good digestion. Unique hydrophilic properties allow them to take up multiple times their weight in water, making them particularly valuable in fasting diets by promoting satiety, hydration, and controlling blood sugar levels. This flexibility has improved their addition in various dietary regimens such as vegan, ketogenic, and gluten-free lifestyles. In India, the production of chia seeds is gaining momentum across numerous states due to favorable agro-climatic situation and increasing domestic and export demand. With a probable yield of up to 2.5 tons/acre and comparatively low input necessities, chia seeds present a capable crop for sustainable agriculture.
