Over the years, organic and aqueous solvents in both conventional and emerging techniques have been employed for protein extraction. Issues such as protein denaturation and alteration, environmental pollution, and toxicity have prompted further research. In the past few years, deep eutectic solvents (DES) have emerged as innovative solvents for protein extraction, composed of hydrogen bond donor (HBD) and hydrogen bond acceptor (HBA) molecules. Due to their excellent physicochemical properties, relatively low cost, and lower toxicity, DES have been identified as sustainable solvents for targeted molecules. This chapter reviews the application of DES for extracting protein from plant materials from 2019 to 2024. The chapter described the advantages and disadvantages, as well as the mechanisms and factors affecting the extraction efficiency of proteins. The discussion also delved into the limitations and challenges to bridge the gap between innovations and practical implementations.
