This chapter covers the early discovery and development of deep eutectic solvents (DESs), their physicochemical properties, and a comparison with ionic liquids (ILs). DESs and ILs share many similarities, but DESs are generally safer, cheaper, and easier to synthesize. DESs have gained popularity because they are easy to produce, non-toxic during handling, and pose minimal environmental hazards. Furthermore, DESs are better in terms of biodegradability and low toxicity, which is attributed to the natural origin of their components. As such, these solvents are considered green solvents and can serve as alternative options for industries seeking sustainable solutions. Nevertheless, both ILs and DESs offer promising prospects for further research, especially in analytical chemistry and industrial applications.
