This strategy entails adding vitamins, minerals, vital fatty acids, and bioactive compounds derived from plants to everyday diets. Additionally, the increasing demand for vegetarian diets presents an opportunity to fortify conventional food products with plant-based ingredients, enhancing public health outcomes and advancing sustainable agriculture. At the same time, there is growing concern about food adulteration, particularly with regard to the integrity of phytoconstituents. When synthetic or harmful substances are added to plant-based foods, their nutritional value is compromised and health hazards are exacerbated. Therefore, in order to ensure the safety and authenticity of plant-based fortified foods, reliable techniques for detecting adulteration are essential. With an emphasis on their phytochemical content, nutritional advantages, difficulties in putting plant-based fortification strategies into practice, and future potential as a cutting-edge tactic to enhance global nutrition and health outcomes, this chapter examines a variety of plant-based sources that can be used to fortify foods. Additionally, this chapter explores techniques for detecting adulteration and confirming the purity of phytoconstituents in fortified food products, including spectroscopic approaches and chromatographic analysis.
