Bio-fermentation, a process leveraging the metabolic capabilities of microorganisms, has emerged as a sustainable and efficient strategy for food fortification. Microbial fermentation enhances the nutritional profile of food by synthesizing essential nutrients such as vitamins, amino acids, and bioavailable minerals. This process involves utilizing beneficial microbes, including Lactobacillus, Saccharomyces, and Aspergillus species, to produce fort ified food products that cater to diverse dietary needs and combat micronutrient deficiencies. In addition to nutrient enhancement, bio-fermentation improves food safety, shelf life, and sensory attributes, ensuring consumer acceptance. The approach aligns with global efforts to address malnutrition, particularly in regions with limited access to nutrient-rich foods. This review explores the potential of microorganisms as bio-factories, delving into the mechanisms of nutrient synthesis, advancements in fermentation technology, and applications in fortifying staples like dairy, cereals, and beverages.
