As per Ayurveda, nutrition is not only related to performing metabolic activities and various functions of the body, but also often referred to as medicine in terms of playing a crucial role in the prevention and cure of various chronic diseases. The appropriate and balanced diet always maintains overall health, strengthens the immune system, supports essential body functions appropriately, and lowers the risk of diseases like heart disease, diabetes, and cancers. Various sources of food provide particular types of nutritional attributes to the body. Millets, coming under pseudocereals, mainly provide carbohydrates, fiber, proteins, and minerals like calcium, magnesium, and iron. However, fruits and vegetables are rich in vitamins, minerals, phenolic compounds, phytochemicals, and antioxidants. Various spices and herbs are mainly consumed in very small quantities, but they are very essential due to the presence of valuable aromatic compounds, pigments, essential oils, etc. They have a special role in immunity boosting. The staple food mainly includes cereals and pulses that are the major source of carbohydrates and proteins required for basic body metabolism, energy generation, and growth.
