Foodomics: Recent Trends in Food and Omics

Safe, nutritious, and sustainable food is crucial for maintaining human health and well-being, particularly in view of the growing global challenges such as nutrition security, climate change, and biodiversity loss. The COVID-19 pandemic has heightened awareness of healthy eating, sustainability, and the importance of food quality and safety. Advancements in food technologies, such as foodomics, have revolutionized our understanding of food, not only as a source of energy and nutrients but as a preventative tool for future diseases. Foodomics integrates genomics, transcriptomics, proteomics, and metabolomics (omics tools), offers a comprehensive approach to the analysis of food composition, nutritional properties, and their impact on health. This approach aligns with the tenets of Ayurvedic nutrition, which emphasize food as a medicine, promoting balance and wellness. By employing multi-omics techniques, it is possible to develop personalized nutrition solutions that are tailored to address specific health challenges. Furthermore, foodomics has potential to influence the circular economy by promoting sustainable food production practices. This chapter provides an overview of foodomics, exploring its tools, applications, and future potential in achieving safer, more sustainable, and personalized nutrition in the new food era.
