Fermenting Heritage: The Traditional Alcoholic Beverages of Kinnaura Tribes in Kinnaur, Himachal Pradesh

摘要

The tribal communities in the Indian Himalayan region have long preserved complex traditional practices that connect closely with their environmental knowledge and cultural rituals. Among these practices, fermentation of alcoholic beverages emerge as a key part of identity, livelihood, and spirituality. This chapter examines the indigenous alcoholic beverages among the Kinnaura people of Kinnaur, Himachal Pradesh, focusing on Angoori (from Ribba), Nesang brandy (from Nesang), and Mixed Fruit Rak (from Kanam). Each of these beverages shows how the community utilizes local materials such as grapes, barley, and seasonal fruits, and their specific preparation methods. The ancient modes of preparation, handed down from generation to generation, highlight the complex nexus between traditional knowledge and environmental adaptation. These practices contribute to enhancing community identity and resilience, particularly in the context of remote Himalayan livelihoods. We document the methods of preparation, of these beverages, their cultural significance, and the science behind it, emphasizing the necessity of preserving this cultural heritage amidst modernization.
