By altering the commodity’s initial form, a new potential can be unlocked by extending the freshness, preserving nutrients, and producing entirely new products. Techniques such as drying and dehydration help in long-term storage while intensifying flavors. Floral potpourri offers aesthetic and aromatic appeal, turning waste into beauty. Converting vegetables into powders can simplify cooking and boost convenience for health-conscious consumers. Juices, essential oils, natural pigments, and edible dyes can preserve the essence of horticultural produce while opening a path toward health, cosmetic, and food industries. Fermentation techniques, whether alcoholic, acetic, or lactic, transform raw horticultural produce into value-added products that are not only rich in flavor but also filled with probiotics, enhancing both shelf life and nutritional benefits.
