Naturally occurring substances with acidic properties containing carbon are referred to as organic acids. These substances are known for being weakly acidic and are often categorized as alkanoic acids or aliphatic acids. These aliphatic acids possess at least one functional group consisting of acids, including carboxy, sulfhydryl, and sulfone. Different kinds of organic acids include citrate, ethanoic, sour salt, butanoic, etc. The production of most organic acids and their derivatives occurs through three methods, which are microbial fermentation, enzymatic processes, and chemical synthesis. Different microbes produce significant amounts of these compounds from chemical feedstock waste. Microorganisms generate these acids via their metabolic sequences, which include glycolysis and tricarboxylic acid metabolism. Lactic acid is essential in synthesizing polylactic acid, an aliphatic polyester that is both biodegradable and biocompatible. Ethanoic acid is an important product of gut microbial metabolism and helps maintain a healthy intestinal microbiome. Various other acids, like sour salt, butanoic, and propanoic acids, are described below. These acids contribute to food safety and gut health. With advancements in food processing methods and rising public concerns regarding natural additives, the market for bio-based organic acids has expanded and emerged as a significant category of chemicals.
