The study identifies food securityFood security as a key element of critical infrastructureCritical infrastructure and highlights the potential for deliberate attacks on it, i.e. food terrorismFood terrorism. The author describes the concept and components of food securityFood security and some of the stages of the food supply chain that are most vulnerable to a possible deliberate attack. It describes the importance of the RASFF and TRACES alert systems for monitoring food contaminated by omission or intent and the importance of prior risk assessmentRisk assessment for food processing and food retail outlets. The author describes these alert systems and mentions the difficulties they face in the food trade in third-world countries. In the final chapter of the paper, recommendations are made on the directions for the development of alert systems.
