The integration of insect-derived extracts in feed and food products has become a field of growing interest in recent years. In this chapter, we collect different studies carried out on edible insects’ transformation processes and focus on the possibilities of using pulsed electric fields in different processing steps. The first part of this chapter provides a comprehensive overview of the general characteristics of insects and their importance as a food source, with a focus on the potential of edible insects to contribute to global food security and environmental sustainability. The second part of this chapter delves deeper into the topic of using PEF technology for insect processing. The main published results are summarized. The advantages and limitations of PEF treatment are discussed, and the future challenges and opportunities of the sector are finally presented.
