Demand for innovation in food production has never been more pressing to secure sustainable and resilient food systems for the future due to the surging global population. Algae offer a promising solution, packed with a cocktail of nutrients in abundant amounts. They can be integrated into diets either as whole algae or refined extracts. Their ability to grow on waste streams allows them to recycle nutrients and reduce pollutants, which require careful monitoring of waste sources to ensure food safety. However, high production costs, variable consumer acceptance, and safety considerations need to be addressed, requiring innovations in cultivation, consumer outreach, and safety assurance. Consumer perceptions vary widely, influenced by educational and cultural factors, and while general awareness of algae’s benefits is rising, concerns over taste and toxins persist. Educating consumers on the nutritional and ecological advantages of algae-based food is essential to bridge these gaps. This chapter investigates diverse nutritional, economic, and ecological benefits of algae along with addressing critical themes such as safety considerations, emerging market dynamics, and pertinent regulatory frameworks, reflecting potential applications of algae, and emphasizing shifts in consumer perspectives and the legislative environment.
