Ensuring the quality of fish is essential for maintaining nutrition safety and excellence. In this project, an integrated system for real-time fish freshness assessment leveraging ESP32 CAM and MATLAB analysis is proposed. The ESP32 CAM module captures high-resolution images of fish samples, while MATLAB algorithms process these images to evaluate freshness indicators such as color, texture, and surface gloss. The proposed system offers several advantages, including non-destructive assessment, rapid processing, and objective evaluation criteria. Experimental results demonstrate the system’s effectiveness in accurately determining fish freshness levels, with a high degree of correlation to traditional sensory evaluation methods. Moreover, the real-time capability of the system enables timely decision-making in various applications, including fisheries, aquaculture, and seafood retail. This research contributes to the development of innovative technologies for enhancing food quality control and ensuring consumer satisfaction in the seafood industry.
