Millet Grain Value Addition: Bioactive-Enriched Millet Milk Powder

In recent days, attempts are being made for the utilization and acceptability of millets by developing bioactive-enriched milk powder from germinated millets. The major challenge in producing millet milk powder is the separation and sedimentation rates of the extracted milks. To overcome this issue, germination and enzyme treatments have been reported, and these treatments are found to be promising. Moreover, attempts have also been reported to fortify millet milk with bioactive compounds to enhance its nutritional value. Various drying technologies are also used for the production of bioactive-enriched millet milk powder. The bioactive-enriched milk powder from germinated millets has the potential to improve their acceptability and utilization, and contribute to sustainable production and utilization of underutilized grains like millets as a non-dairy alternative. However, a detailed investigation is needed to enrich the nutritional composition of millet milk and the stability of millet milk powder under different packaging and storage conditions.
