In this research, fuzzy logic and the Mamdani model were used for modeling, simulation, and control of an anaerobic olive fermentation system. Graphical programming was applied in LabVIEW software, which is versatile and very easy to program compared to linear programming, which requires a specialist in such programming. The temperature and sodium chloride content in the fermenter brine were considered input variables, and the output variable was the time taken for anaerobic fermentation based on the input variables. Virtual instrumentation was used, with the software used to facilitate modeling, simulation, and control of the fermentation system. The results indicate that the fermentation system can be controlled using the input variables appropriately.
