These introductory notes are based on three lectures I gave at the Fields institute in November 2021, during the “Thematic Program on Trends in Pure and Applied Model Theory”. They cover the very basics of simplicity theory and NSOP \(_1\) theories, culminating in proving symmetry of Kim-independence. The notes are partially based on notes by Nick Ramsey for an online mini-course he gave at Fudan university (China) in December 2020.
