Securitization is the linguistic expression of nationalism and nationalist conflict. Language shapes perceptions of self and other, which is often reflected in the way people speak about food and food ownership. This chapter will discuss the nationalization of hummus and other Middle Eastern dishes between Israel and the wider Arab world. In this chapter, I will continue to analyze the securitization as communicating conflictual language between Israel and the Arab World. This will be referred to as behind the hummus war, specifically its construction as inextricably linked to the wider Arab–Israeli conflict. Food becomes an essential part of an ideological–nationalist conflict and the manufacture of warring identities. This chapter will analyze the conflictual language of food nationalism, specifically its construction as inextricably linked to the wider nationalist conflicts. Discourse analysis is the methodology used to understand the fight over ownership of hummus and its role in the perpetuation of identities of Israelis and Arabs. The hummus conflict is completely destructive, consolidating the identity of us versus them, Arab versus Israeli, and perpetuating decades-old hatreds.

Securitization is the linguistic expression of nationalism and nationalist conflict.
