Digitalization in Processing

The rapid advances in artificial intelligence (AI) are opening new possibilities in data processing and analysis and are slowly finding their way into the bioeconomy. The potential of AI in food processing is immense, as it can be used to optimize systems and processes, thus minimizing production-related food losses or optimizing product quality. Similarly, the progressive developments in the Internet of Things (IoT) are leading to the increasing networking of information systems and enabling a comprehensive data exchange. These new technologies, especially those systems that often integrate a wide range of sensors for measuring the environment (e.g., temperature, humidity or acceleration), product-related parameters (e.g. pH value, colour or gas escape) or process-related parameters (e.g. volume flow, pressure or machine parameters), are paving the way for a more efficient and sustainable future in food processing. This chapter explains state-of-the-art information technology concepts, mainly AI, machine learning (ML), IoT and digital twins. Digital twins, in particular, are an emerging technology that is gaining traction in the food processing industry. The chapter further elaborates on how to apply these technologies for monitoring food quality and processing, providing a comprehensive understanding of the latest trends in the field.
