The Fungal Edible Proteins’ Industrial Biotechnology: Where Are We?

Different kinds of fungi are widely involved in full or partial biotechnological applications. Fungal cells can stand alone, each, as a cell factory unit to produce one or more than one of the respective numbers of biotechnological products. Such products can be edible protein, enzymes, pharmaceuticals’ products, secondary metabolites, and the like. Applying a powerful hydrocarbon degrading machine and safe microbe such as the fungi will be a perfect choice for any biotechnological process aiming to produce inexpensive edible protein. This chapter is concerned with the edible fungal protein. The protein produced from the fungal biotechnological production processes could add privilege to the other protein resources. Such protein can be consumed directly by humans or indirectly by fortifying the animal feeds.
