Microalgae-Based Pigments as Food Freshness Indicators in Smart Packaging

The use of renewable resources instead of artificial resources in the packaging industry has received much consideration in recent years. As a superfood, microalgae have compounds that can act as an indicator of the physical, chemical, mechanical, antioxidant, antibacterial, and barrier properties of food packaging. This book chapter aims to examine the aspects of using microalgae, especially their pigments, in active and smart packaging. This chapter discusses the difference between natural and artificial pigments and their health benefits. Also, the wide applications of packaging with microalgae in food are evaluated. Another effect of these packages is on the safety and quality characteristics of food; in this book chapter, an attempt has been made to evaluate these effects. The target market and the prediction of the use of microalgae pigments in the future are other approaches examined in this chapter. As a result, the use of renewable resources such as microalgae pigments can affect the physicochemical properties of packaging films. But the amount and type of use should be carefully examined. In addition, the packaging matrix will have a high impact on the efficiency of the pigments used.
