Introduction

The field of Sensory and Consumer Science has undergone major transformations together with continuous expansion throughout its history of over 100 years (Jaeger et al., 2025; Meiselman et al., 2022). What began as a discipline focused on understanding the chemical senses and quantifying physiological responses to stimuli, with a solid orientation to be used by the industry as a complementary tool for product description—evolved into a comprehensive science interested in consumer–product interaction which goes beyond foods and beverages (Lahne, 2016).
