These naturally occurring compounds, produced by fungi, offer various applications, including natural food preservatives, flavour enhancers, and bioactive compounds with potential health benefits. However, the utilization of FMs in the food sector presents significant challenges. Issues such as variability in production and regulatory hurdles to the safety of certain metabolites need to be addressed. Among these concerns, mycotoxins, the toxins produced by certain fungi, significantly threaten food safety and public health. Contamination with mycotoxins can lead to severe health implications and economic losses, necessitating stringent monitoring and control measures. This chapter explores the multifaceted applications of FMs in the food industry and examines both the current challenges, including mycotoxin contamination, and potential solutions to leverage their full potential. Advancements in biotechnological approaches, improved processing techniques, and rigorous quality control measures are discussed as pathways to overcome these challenges, aiming to enhance the sustainable and safe use of FMs in the food industry.
