Millets are nutritious and resilient grains with abundant amounts of minerals and nutritional properties, making them a good food for diabetics and people with obesity due to their low glycemic index. However, millet consumption is lower due to its shorter shelf life than other cereals, fewer processing practices, and a lack of good appeal. Millet processing technologies are vital in enhancing the utilization and commercial viability of these nutritious grains. The primary problem lies in the underutilization of the millet despite its nutritional benefits, lack of adequate processing methods, and awareness. Existing solutions, including traditional milling, fermentation, and malting, have enhanced millet utilization; however, these fall short in terms of efficiency, scalability, and consumer acceptance. Preserving and implementing the new processing technologies on the millet will suppress food insecurity and malnutrition. This chapter is about different millet processing technologies to enhance the world food security. The capability for enhancing the efficiency of processing millet-based products has also been reviewed. Furthermore, we explored the socioeconomic implications of adapting advanced technology to enhance the growth of the processing industries. We aim to underscore the significance of millet processing technologies in addressing contemporary challenges and unlocking the complete capacity of these sturdy and nutrient-rich crops, and prospects for future research and development.
