Guac-AI: Computer Vision Applied to the Production and Classification of Green Gold for the Agro-Industry in Mexico

Guac-AI is an intelligent avocado classification system which integrates near infrared (NIR) spectroscopy and computer vision to determine the fruit’s state of ripeness in a harmless way. The system can identify four stages of ripeness—Green, Pre ripe, Ripe and Overripe—from surface quality parameters such as firmness, peel texture, and color uniformity. By using hyperspectral images and automatic learning algorithms, the sorter analyzes spectral signatures and visual patterns to generate accurate readings from the Hass avocado’s state of ripeness. The combination of NIR analysis and computer vision allowed to find subtle external changes, achieving coefficients of determination (R2) higher to 0.90 in lab calibrations. The system provides specific recommendations for storage, consumption or processing, improving decision making regarding the post-harvest chain.
