The emergence of clean label starches demonstrates a major breakthrough in food science by addressing modern processing limitations with the rising consumer demand for natural and less processed food products. This chapter evaluates the shift from traditional chemically modified starches used to enhance product performance to starches that utilize physical and enzymatic modifications without synthetic chemicals. In this section we explain how heat-moisture processing and nanoprecipitation treatments enhance thermal stability and emulsification properties along with creating low-glycemic index products yet they must deal with increased production expenses, natural product variability and unclear regulatory guidelines. The discussion highlights the necessity for ongoing interdisciplinary research efforts to create improved methodologies which will enhance the potential of clean label starches to produce superior transparent food products.
