Vitamin C plays a crucial role in the body, contributing to a wide variety of functions including neurotransmitter synthesis, hormonal function, collagen maturation, and oxygen sensation. Deficiency in children can manifest in several ways including cognitive changes, skin changes, bleeding, and increased bone fragility. Given that vitamin C intake is essential to maintaining such a wide variety of bodily functions, it is crucial that the providers are aware of vitamin sources and appropriate intake levels. Maintaining vitamin C levels could improve outcomes particularly in certain groups of the chronically ill pediatric population. This chapter will discuss vitamin C’s roles in the body, sources and storage of vitamin C, recommended intake, and ongoing research regarding vitamin C’s contributions to regulating inflammation and cardiovascular disease.
