The chapter examines methods of salt extraction in Ukraine, alongside the economic and cultural significance of salt, drawing on historical and archaeological evidence. In Ukraine, salt has been extracted through various techniques, ranging from open-air collection to mining rock salt (halite) in underground salt mines. Archaeological finds and ethnohistorical parallels allow for the reconstruction of salt extraction processes in the Northwestern Black Sea region during the second half of the fourth through the third millennium BCE. Remarkably, methods of salt production have remained largely unchanged over centuries. As a result, it is reasonable to extrapolate techniques known from written and ethnographic sources to earlier periods that lack written records.
