Biotechnological Innovations in Packaging and Sensors in Food Processing
摘要
Biotechnology is an emerging transformative field in the global food sector, addressing safety and quality concerns. It is used to synthesize biopolymers/biosensors, which play a vital role in the food industry. Biopolymers are used to develop biopackaging, reducing single-use plastics that harm the environment. However, biopackaging often lacks desired qualities like mechanical strength and barrier properties. To improve the properties, biopolymers are combined with other materials and bioactive compounds, resulting in advanced solutions such as active and intelligent packaging. Active packaging interacts with food to prevent spoilage and extend shelf life, while intelligent packaging uses sensors to monitor food quality. Biosensors further enhance safety by detecting contaminants, pathogens, and adulteration. Nanotechnology plays a crucial role in improving the functionality of packaging and sensors. This chapter explores biotechnological advancements in packaging and sensors, highlighting their potential to enhance food safety, quality, and sustainability, thereby shaping the future of the global food industry.
