This research is unique as it provides a comprehensive comparison of consumer sentiment across different pandemic phases, offering a detailed perspective on how health consciousness and organic food preferences shifted over time. The study’s innovative use of Latent Dirichlet Allocation (LDA) and perceptual map scores distinguishes it as a pioneering approach in the analysis of organic food trends during these critical periods. By capturing changes in sentiment and identifying key characteristics influencing consumer choices, the research highlights the increased preference for organic food during the pandemic due to health concerns and immunity needs. It also reveals a growing emphasis on supporting local farmers and sustainable food practices in the Post-COVID era.
