Neural Control of Appetite and Food Choices in the Context of Food Safety

There is a well-known phrase by the German philosopher: “We are what we eat.” This phrase clearly reflects the idea that a person’s food choices are directly linked to their health and well-being. In addition, two important aspects of feeding; quantity (how much) and quality (what and when) can serve as key tools in understanding the underlying mechanisms of feeding behavior and food choices. The control of appetite and dietary preference is associated with the brain and impacted by both non-homeostatic and homeostatic processes. Homeostatic regulation is controlled by hypothalamus, having neurons that use ghrelin and leptin hormones to modify energy expenditure and hunger. As far as non-homeostatic process is concerned, its elements include emotion, reward, memory, perceptive and cognitive control systems. The mesolimbic dopamine pathway affects motivation and pleasure associated with eating, regulated by dopamine and plays a key role in regulating the pleasure we get from eating. Homeostatic signals can be predominated by emotional responses, particularly those involving the amygdala, which can result in increased ingestion of high-calorie foods even when a person is not hungry. By connecting specific circumstances with appetizing foods, memory—controlled by the hippocampus—can impact dietary decisions that lead to overeating. In addition, food choices are significantly affected by perceptions of food safety, particularly in low- and middle-income countries, where the risk of foodborne illnesses is intensified due to urbanization and globalization. Consumption patterns and food safety are also greatly influenced by an individual’s risk assessment regarding food safety. It validates how brain, environmental conditions and cultural ideas intermingle to shape the eating habits. Moreover, encouraging and understanding food safety measures can reduce food-related anxiety, which might result in healthier eating habits. Conclusively, it can be stated that environmental, biological and psychological elements interact vigorously to affect eating decisions. Food safety issues and healthier eating habits can be better addressed by twigging both these systems and how they work together.
