Chronobiology-the science behind all these biological rhythms has become the eye through which food safety can be scrutinized physiologically. This chapter will look into health and nutrition through the lens of the chaos brought to food safety practices by circadian rhythms about nutrient metabolism and the outcome on health. The physiological functions of humans-digestion, metabolism, detoxification, etc., are all governed by circadian patterns. These circadian patterns of physiological activities are, in turn, responsible for the way the body reacts to foodborne hazards, contaminants, and the timing of nutritional intake. The timing of food intake manipulates the gastrointestinal functions and gut microbial composition and affects immune responses that together help minimise the risk of foodborne illnesses. Apart from this, circadian disruption due to irregular eating patterns, shift work, and travelling across time zones further weakens the defence mechanisms of the body and increases the susceptibility to foodborne pathogens, apart from making dietary interventions less effective. Nutritionally, syncing meal timing with the before resetting such as absorption and metabolism of nutrients while decreasing toxin accumulation and metabolic stresses. If such feeding times do not correspond with the structure of the body’s internal clock, they will further heighten risks associated with improper food preparation, storage, and consumption. From this chapter, it emerges that priority ought to be paid to integrating such a chronobiological understanding of food safety and public health. Such developments will thereafter shift into guidelines also addressing not only hygiene and nutrition but also timing with regard to eating behaviour. Such dynamics of food safety are thereby potentially able to provide better health outcomes while deepening our understanding of the reinforcement between physiology, nutrition, and food safety.
