Immunological Responses to Foodborne Threats

Foodborne pathogens represent a considerable risk to public well-being, causing a spectrum of illnesses from mild digestive issues to severe systemic infections. The present study scrutinizes the complex interplay between foodborne pathogens and the host’s immune defenses, aiming to clarify the underlying mechanisms of these interactions. Grasping how pathogens circumvent immune responses and how the host orchestrates defensive measures is vital for crafting effective strategies to combat and avoid foodborne diseases. Recent progress in molecular biology and immunology has illuminated crucial virulence factors of pathogens like Salmonella typhimurium, Listeria monocytogenes, and Escherichia coli, and their influence on the host’s immune reaction. Despite its protective role, the immune system can sometimes falter in safeguarding the host. This vulnerability arises from pathogens’ evolutionary adaptations, which have yielded virulence factors enabling them to infiltrate, persist, replicate, and propagate within host tissues, thereby circumventing immune defenses. A critical consideration is the rapid action of foodborne exotoxins, which leaves the host with insufficient time to elicit an immune response. As a result, the majority of individuals are susceptible to this type of food poisoning (intoxication), irrespective of their health condition or immunological status. This chapter delves into current understanding of host-pathogen dynamics, emphasizing the significance of innate and adaptive immunity in countering foodborne infections.
