Global Perspectives on EPS Application Showcasing International Case Studies of Successful EPS Application: Analyzing Cultural Influences on the Adoption of EPS in Different Regions

Biopolymers produced by bacteria, fungi, and other microorganisms are referred to as microbial extracellular polysaccharides (EPS). Because of their biodegradability, biocompatibility, and many industrial uses, they have been garnering considerable interest. With the food and medicinal sectors being explored for applicability of EPSs, this study looks at the synthesis and characteristics of these materials and their potentials. Natural fermentation techniques to augment EPS production using renewable substrates and ensuring optimal environmental conditions are investigated. EPS structures can be customized via metabolic engineering and enzymatic changes for certain activities. Bioactivity and extraction efficiency may be increased through nanoparticle conjugation and ultrasonic treatments. The use of EPSs has been demonstrated to alter the texture of dairy products, baked goods, and confectionery; reduce syneresis; and extend the shelf life of these products. The significance of EPSs lies in their capacity to improve food quality, increase rheological and textural features, and serve as a natural alternative to synthetic additives. . Due to their unique physicochemical characteristics, EPSs have the potential for biomedical applications in drug delivery, wound healing, and tissue engineering. While these breakthroughs are unambiguous, economical manufacturing and the establishment of comprehensive structure-function linkages lag behind industrial scaling. Economical substrates may be included, metabolic pathways may be enhanced, and characterization techniques may be refined to mitigate barriers toward their full commercial potential.
