This chapter explores tropical fruits and their waste, considering the different molecules present in their waste and their biological activities. It includes an introduction about known fruits and their waste, as well as the health benefits of different phytochemicals. Tropical fruits, like any fruit, generate a lot of waste when industrialized, such as peel, seeds, and other parts of the plant such as leaves and stems that are not used for food. These plant tissues are composed of different molecules that we can take advantage of using different extraction processes for their recovery. The concept of biorefinery has been introduced in recent years to utilize all the compounds present in the waste generated when industrializing raw materials. In this case, the focus is the tropical fruit industry. Just as bioactive molecules are present in consumer pulps, they are often found in different concentrations in their waste. The treatments for the recovery of these compounds of interest from waste must be appropriate to preserve the biological activity of interest.
