It is predicted that the world’s population will continue to grow, leading to an increase in food consumption and waste generation. While food waste is a major economic and environmental issue of the twenty-first century, it also presents numerous opportunities for resource recovery. By reducing food waste, significant direct and indirect costs to the economy, society, and environment can be minimized, contributing to enhanced food and water security and a decrease in negative environmental impacts. However, reducing food waste requires fundamental change in the food system, as food waste is often a symptom of inefficiencies in the system. The circular economy presents an alternative approach that emphasizes the efficient use of resources and minimization of waste. This approach can be applied to use agri-food waste as a secondary resource to create valuable bioactive compounds for industrial applications. In this context, this chapter will focus on the use of agri-food wastes to produce versatile bioactive compounds for various industrial applications. While food waste affects the entire world, it is important to prioritize funding and research efforts towards implementing circularity in developing nations.
