Innovations such as augmented and virtual reality (AR and VR, respectively), blockchain, and the metaverse are increasingly being integrated into dining experiences, blending physical and digital touchpoints in new ways. The chapter considers how these tools build excitement before a meal, enrich sensory engagement during consumption, and can help to sustain connections long after the meal has ended. By creating more seamless and multisensory journeys, these technologies have the potential to transform not only how we eat, but how we relate to food and dining. At the same time, the chapter reflects on the challenges these innovations pose, including questions of authenticity, accessibility, and long-term value. It highlights both the opportunities and limitations of integrating these technologies into culinary contexts, offering a critical perspective on the future of digital gastronomy.
