Legumes have been recognized as the second most popularly consumed food after cereals. The role of legumes in human and animal nutrition cannot be overemphasized. Legumes are well known as a vital component of several healthy dietary patterns. Their outstanding proximate compositions, absence of cholesterol, and experimentally proven deficiency in saturated fat have accounted for their wide consumption as an alternative to other protein sources. The presence of numerous biologically active compounds and vital natural products has further revealed their use in medicinal supplements and as indispensable pathways for human and animal health. More recent studies have further reported the presence of numerous antioxidant-containing natural products that are valuable in defending the body from various notable degenerative diseases such as osteoporosis, stroke, heart disease, cancer, Arteriosclerosis amongst others. Empirical evidence have shown that this class of food materials has significant potential in the prevention and treatment of several health conditions. This chapter therefore focuses on the role of legume natural products in human and animal health. It gives a general overview of legumes and their nutritional value; it highlights the various bioactive compounds present in legumes. It also discusses comprehensively the role of legumes in animals and human nutrition, with recent reports on studies on natural products from legumes as a pathway for human and animal health. Finally, the future direction of research in this dimension is also attempted.
