Microbial Production of Lactones (Peach and Fruity Flavors)

The search for natural, high-quality flavor compounds has led to the development of innovative production methods, as traditional approaches face challenges such as low yields and environmental impact. Lactones are aromatic compounds widely used in the food industry due to their unique fruity aroma and natural occurrence in various foods. While traditionally obtained from fruits or through chemical synthesis, microbial production of these compounds has emerged as a promising and sustainable alternative, well aligned with consumer preferences for natural compounds. Biotechnological processes, particularly those exclusively using biotransformation, have been developed and patented. However, current methods using hydroxy fatty acids as precursors have limitations, including dependence on specific precursors with high commercial value and sustainability challenges. However, recent studies demonstrate promising developments in microbial engineering, with microorganisms being manipulated for lactone production through de novo synthesis or biotransformation of non-hydroxy fatty acids. This chapter synthesizes current advancements, challenges, and opportunities in microbial lactone production, offering insights into the complexities of biosynthesis. First it will be addressed the diversity and significance of lactones, followed by an investigation into the present comprehension of the biochemical pathways engaged in lactone production. Finally, opportunities and challenges toward more sustainable lactone production are discussed. The convergence of biotechnology, microbiology, and flavor science signals a transformative era in producing sustainable and customizable flavor solutions within a circular bioeconomy.
