Diacetyl has a buttery flavor and is extensively utilized as a flavoring ingredient. It is produced from sugars and fats by the action of different microorganisms and through heating in diverse meals and drinks. 2,3-Butanediol (2,3-butanediol) possesses significant promise across several industries, particularly chemicals, cosmetics, agriculture, and pharmaceuticals. Nonetheless, its industrial extraction and utilization are constrained by the relatively high expense of its petroleum-based manufacturing. Multiple naturally derived 2,3-butanediol manufacturing methods have been established, and their cost benefits compared to petrochemical production procedures have been shown. Numerous microorganisms have been identified and metabolically modified for the efficient synthesis of 2,3-butanediol. Moreover, many fermentation techniques have been evaluated utilizing feedstocks like glycerol, sugar, starch, and lignocellulose as initial ingredients. The extraction and purification of 2,3-butanediol from the fermentation medium constitute the predominant portion of its manufacturing expenses, prompting the concurrent development of affordable procedures. The inhalation toxicology of diacetyl has lately garnered the attention of the public and regulatory bodies. Although exact quantitative measurement of diacetyl is crucial for assessing its potential deleterious effects, doing such research in foods, drinks, and ambient air is significantly challenging due to its high reactivity and water solubility. Among the several analytical techniques established for quantifying diacetyl, the synthesis of 2,3-dimethylquinoxaline subsequent to gas chromatography has been the most prevalent in the examination of diverse foodstuffs, drinks, and air specimens. This chapter reviews the fundamental innovations for bio-production, analytical methodologies, occurrence, and toxicology of 2,3-butanediol, and discusses their possible applications in the business domain.
