Ellagic acid is a bioactive compound with important biological properties including antioxidant, anti-proliferative, anti-carcinogenic, anti-mutagenic, anti-microbial, and anti-viral activities and many other metabolic benefits to human health. The present chapter is focused on the microbial production of ellagic acid as an alternative technique to conventional chemical extraction. Special emphasis is made on sources, microorganisms, fermentative processes, and technological developments on the topic.
